Risotto all'isolana is a dish from Veronese cuisine, typical of the municipality of Isola della Scala. Indeed, it is prepared alongside other risottos every year at the Rice Fair. Risotto all'isolana is the signature first course of the Isola della Scala area, a region renowned for the production of Vialone Nano Veronese rice. The recipe was codified by Pietro Secchiati in 1967, coinciding with the first Isola della Scala Rice Fair. Although minor adjustments were made to the official recipe in 2016 to mark the fair's fiftieth anniversary, it remains a simple yet bold-flavored first course.
