Squid ink risotto is a typical Venetian and Florentine dish, and is also popular in other Mediterranean cuisines (such as Spanish arroz negro). Originally a humble dish, it combined cuttlefish, with all its ink, with rice. It later spread to Croatia under Venetian rule and to Friuli (where it is still a typical dish), and later throughout much of the Mediterranean, thanks primarily to Venetian merchants.
