Sardines in saor are a typical Venetian appetizer. They consist of a terrine of fried sardines dipped in "saor," a flavorful condiment made with onions cooked in vinegar, pine nuts, and raisins. Saor, in addition to being a delicious marinade, is an effective method of preservation. Sardines in saor originated from the need to preserve fish on ships for a prolonged period of time. This particular preparation allowed the fried fish to remain excellent for several days. Sardines in saor are even better if enjoyed after resting for at least 24 hours.
