Amarone risotto is a flavorful first course prepared with top-quality ingredients from the Verona area. The rice used for this recipe is Vialone Nano, grown in the Bassa Veronese area and protected by the PGI mark. It's blended with Amarone della Valpolicella, an excellent red wine with a full, velvety flavor, produced in the Valpolicella area. Finally, the risotto is stirred with grated Monte Veronese, a cow's milk cheese made in the northern province of Verona, often replaced with the more well-known grated Grana Padano.
