Risi e bisi (from the Venetian word for rice and peas) is a typical Venetian dish made with rice and peas. This first course is part of the ancient culinary tradition of the Serenissima Republic of Venice and quickly spread inland with the intensification of trade relations between Venice and Vicenza; agricultural products circulated throughout the region, and the peas grown on the slopes of the Berici Hills reached the lagoon, where they were particularly prized. It thus became a celebratory dish for spring, as this was the season when the first pea harvests occurred.
