BaitoneAlpino Cooks: Zelten

Zelten is a sweet fruity bread traditionally found in the villages of South Tyrol and Trentino. The key ingredient is dried fruit, which is held together with a leavened dough made from wheat and rye flour. In ancient times, Zelten was a family affair, and a fairly large loaf was then cut into many pieces to be given as gifts. Tradition dictates that Zelten be prepared around December 13th, or during the Advent period, and then eaten at Christmas, as it must rest for at least 10 days before being eaten.
